Send in the Clouds

Most of the time, given a choice, people will choose clear apple juice over cloudy.  But that may be about to change, as new research shows that the cloudy variety is healthier.

Polish scientists discovered a much higher polyphenol cont in cloudy apple juice - 400% higher.  Polyphenols are powerful antioxidants, offering some protection against a variety of diseases.  And those polyphenols appear to be stripped out during the process of clarifying the juice.

According to the researchers, the clear juice they tested (made from Idared apples) held 250 milligrams of polyphenols in one litre....and the cloudy juice (made from Champion apples) contained a whopping 1044mg/L. Next, they measured just how well each juice could scavenge free radicals, and again the cloudy version won out. The Champion juice got 93% in just 3 minutes, while the Idared clear juice scavenged a paltry 24%.
