The EPA and Pesticide Safety

It doesn't seem fair: You eat a pound of lettuce, your weight stays the same...but eat a pound of whipped cream and you gain three pounds. That's the way it works though, at least with some foods. And it's all based on calorie density.

That's why someone who eats tons of food all day long can stay slim, while someone who seems to eat less gains more weight. The trick is to stock up on lower calorie, higher value foods. That way you can eat 'til your stomach's content, getting tons of essential nutrients, without packing on the pounds.

The key number for this eating style is the calories per ounce, rather than total calories. That pound of broccoli carries substantially fewer calories than a pound of whipped cream...or chocolate...or chips...or pepperoni. You can thank the high water and fiber content of fruits and veggies for that neat trick, since they add bulk without adding calories. You feel just as full - you still ate the same weight of food - but you're taking in fewer calories.
